Will the data that I record in the free version be kept if I switch to the paid plan?

Absolutely! The free version provides you with all of the features offered with the essential plan. It is not a trial version as such, but rather a free version that lets you try out the platform so that you can decide for yourself. 

This means that the records you create will not be lost if you switch to the essential plan, and you can use real records to test the platform. 

If you create fictitious records, you will also be able to delete them with ease!
